GRACE ON THE CASE: Why has it taken over a year for Princess Cruises to refund me?

I have been trying for over a year to get a refund after my cruise was cancelled - the famous Diamond Princess Cruise which was due to travel around Japan but was cancelled due to an outbreak of Covid-19.
